Back then, pesto pasta is not common in Malaysia. It is quite hard for a person to cook food that he/she never tasted before. I finally had the guts to make it after watching several episodes of shows in Food Networks.
I learnt quickly from Food Network that Traditional Italian pesto sauce is made strictly with basil, pine nuts, garlic, and olive oil and Parmesan cheese.
This is my version and interpretation of making pesto. Most of the time I will use:
- 1/3 cup of roasted pine nuts or walnuts (sometimes I substitute them with almond)
- 2-3 garlic cloves
- 2 cups of sweet basil or baby spinach
- 1/2 cup of Olive Oil just to mix everything
- Salt + pepper to taste
- Juice of 1/2 lemon
- 1/2 cup of Parmesan cheese
Put all ingredients (except Olive Oil) in a food processor.
While the food processor is running, slowly add the olive oil in a steady small stream. Give it a few pulses until ingredients are mixed well and voila!!!
Toss hot pasta with pesto sauce (don't forget to generously salt your pasta water). Happy trying!!!😍
